Title: Low Fat Apple Cinnamon Muffins

  PAM No Stick Cooking Spray
3/4cSkim milk
1/3cNon fat plain yogurt
2 Egg whites
1 Egg
2tsVanilla
1 Zest of lemon
1 1/2cAll-purpose flour
1/3cDark brown sugar, firmly packed
1 1/2tsGround cinnamon
1 1/2tsBaking soda
3/4tsBaking powder
1mdApple, peeled/cored/chopped

Heat oven to 375'f. Spray only the bottoms of 12 medium muffin cups with PAM. In a large bowl beat milk, yogurt, egg whites, egg, vanilla and lemon zest. In a separate bowl combine flour, sugar, cinnamon, baking soda and baking powder. Fold dry ingredients in wet just until moist. Stir in apple. Divide batter among muffin cups. Bake 18-20 minutes or until toothpick inserted into center comes out clean. Immediately remove from pan and cool on wire rack. 102 calories and 1 gram fat per muffin.
